If this is the 3.0 V6 engine (Saab) the coolant thermostat is located between the cylinder heads on the passenger side of the engine. The upper radiator hose connects to a split pipe that uses an O ring to seal the two segments.
To get to the thermostat you must remove the intake manifold assembly, then remove a base plate below that. Prior to removing the top aluminum housing from the thermostat use a large wrench and separate the aluminum pipe leading from the top radiator hose to the theromostat into two sections. Place the wrench on the end where the upper radiator hose connects, and after removing the small bolt that holds the front pipe segment secure, twist the outer pipe out of the flange of the inner pipe. Then remove the two bolts holding the cover and inner pipe over the thermostat and remove the inner pipe and old thermostat. clean the area, replace with new thermostat and cover. An updated kit is available from Saturn with new thermostat, gasket, cover, and O ring.

It should be on the drivers side of the engine. Follow the lower radiator hose to the engine, that is where the thermostat housing is at. That is how it is on the 2000 300M.
Follow the upper radiator hose back to the engine, it is connected to the thermostat housing on the engine. The thermostat is located under the thermostat housing.

There wasn't a 2000 LeBaron. On a Lebaron, the thermostat is under the housing where the upper radiator hose attaches to the engine.
Personally , if I want an engine cooling thermostat changed I just take it in and let a mechanic / technician do it and pay the bill
Drain the radiator down 1/2 way into a container. Remove the top radiator hose from the engine end. The housing is where the thermostat is located. Remove the 2 bolts and the housing. Remove the thermostat and clean the surfaces and install the thermostat.
