There are several ways to do that in Photoshop. Simplest way is to use Image Processor from File > Scripts > Image Processor. Another way is to use File > Automate > Batch but you must record action first. Also you can create droplet from action from File > Automate > Create Droplet. Droplet is mini application which you can place in any folder and drag images onto it to process multiple images. Again you must be familiar with actions to record action for Batch processing and Droplets.
JPEG is a type of image. Mp3 is a type of audio. Its impossible to convert JPEG to Mp3. Try changing the end of the extension, say "House.jpeg" to "House.mp3".

you're making a folder on your computer, called "IPod pics" or whatever u want it, then you copy all pics you want on your IPod into this folder. Then you're adding pics as you get them to this folder. They are probably in the folder Downloads. You have to move them from there to where you want to keep them.
Some gifs are still some are animated. Many people delete them when they are bored with them. GIFS are an image format like jpeg. They just make them small in size that way. Yes, you can delete them; most of your online pics are jpeg or gif. It's just a picture format. The only reason not to delete them other than wanting to keep them is if they are used by a program. If the program needs the images, then it will crash or run unpredictably without them. So if you know you added them or if they are not needed, then you can safely delete them. If you remove the wrong ones, you can always reinstall the affected software.

When you click the Import tool (get photos from camera), you will be allowed to create a folder with a name and location of your choosing over on the left side of the panel that opens. The "create album" icon just allows you to set up the attributes of an empty album. You need to right click on selected pics and select "add to album" to assign pics to your new album, of click the album icon down in the photo tray. You can set up your album attributes the first time you add pics to it if you wish. Of course you realize that albums do not store pics, only links to pics in folders.
