  1. Combine 4 tsp. of powdered eggs with 4 tbsp. of warm water. This creates the equivalent of 2 eggs.

  2. Whisk the powdered eggs in a bowl. Add salt and pepper to taste.

  3. Melt 2 tbsp. of butter in a skillet over medium heat.

  4. Reduce the heat to medium-low. Add the eggs to the skillet.

  5. Scrape the edges of the egg as it cooks. After 2 minutes, the liquid will begin to solidify. Use a spatula to fold the eggs to allow the uncooked eggs to fill underneath the cooked portions.

  6. Continue to scrape and fold the eggs. The more you stir, the smaller the curds form.

  7. Remove the eggs to a plate. They are finished cooking when the egg mixture is firm but still moist.

With great difficulty. Egg powder is made from keeping the eggs on an incredibly low heat until they've dried out. They are then ground up. It is practically impossible to do this at home without accidentally cooking the egg in the process. i.e the egg has to remain 'raw' whilst it's heated to be dried. Give it a go in the oven on it's lowest temperature if you want, but I think it may just result in you wasting an hour of your time.
