It needs to cool down for 2 reasons. 1) To be eaten! 2) It will continue to cook with the heat and can then over-cook and not be good to eat anymore. The air around the cake is (supposedly) cooler. By increasing the surface are by spreading the cake out, you are increasing the amount of space that the hot cake is touching the cool air. This will allow the carrot cake to cool down faster.
