You should soak the dried beans overnight. It is best to spread them out and sort any bad beans, stones and dirt. After soaking them overnight, drain the water and cook them for 1 to 2 hours. They are finished when they are soft. I use them as a substitute for Kidney Beans. They have a rich buttery taste. The calorie count is about the same, so you aren't cutting back any.

You probably mean to ask about Wax Beans, a type of string bean with yellow pods, very similar to Green Beans. The beans are picked while young, before the pods mature and dry. The whole pod is boiled and eaten. Numerous varieties of Dry Beans are left on the vine to mature. When the pods are dry, the beans are harvested by breaking open the dried pods. Only the beans from inside the pod are kept to be washed, soaked and boiled for food.
