The oil is ready for frying onjce a drop of water dropped in the oil causes it to crackle. Place the yams in, and fry until they are crispy, about 12-15 minutes. Drain them on a plate covered with paper towels, and then season to taste. Either salt, or butter, sugar, and cinnamon.
