You can go one route and complain to the head of department/school etc and also through the union. In this case, put together evidence of a number of cases of clear bullying and get a large number of students to support you and hand it in in writing. It would be best to make this complaint anonymously so that if say, 10 students sign it then it could be any one of the 10 of you who instigated it.
Also, don't underestimate the power of the media. Lecturers have been disciplined and even forced to resign after reports of bullying in student newspapers.
Alternatively, you can recognize that a large number of academics are pompous and insecure. If you think this professor is one of them (likely if they're bullying you), then find a way to challenge their knowledge on a subject they feel they are authoritative about; find a weakness within their understanding and research the hell out of it. When you think you have the upper hand, ask a question in class that you know will lead to an embarrassement for them. Many academics simply can't use the phrase "I don't know".
