How do you disassemble a mountain bike?

That all depends on how far you want to disassemble it, and how it's put together. Department store bikes usually have nutted axles, which means that the wheels come off with a wrench. Cross-country (XC) bikes tend to use quick-release skewers instead. Flick a lever and the wheels come off. Downhill/All-Mountain/Free-ride bikes can have thru-axles, which needs another tool (Allen or torx) to get the wheels out. The handlebar/stem will usually come off with Allen keys. For a bike with a threadless headset, the fork will come out once you have the stem off. Bikes with threaded headsets need two large wrenches to get the fork out. Most of the small parts, like levers and derailers will come off with Allen keys.

Cranks will usually need a crank puller as well as either an Allen key or a socket wrench. Bottom bracket needs a special splined tool to come out.
