You really can't.
If the house was made after the 1960, there are strips of board 3/4" thick nailed to the trusses or joists and the drywall is fastened to them.
The stud finder will pick these up, but they're not structural and are only designed to support the wallboard of the ceiling itself.
If the house is pre '60s, the ceiling is probably plaster over 1/4" wooden lath and may have a layer of wallboard over that.
You're going to have to cut a hole to locate the joists if you need a strong connection.

A gold detector will find diamonds if they are surrounded by gold. A gold detector cannot find a lose diamond that is not set in gold, because you're using a detector of gold, not diamonds.
You can supply the voltage to the swag from a wall box but the whole purpose of a swag fixture is to have it hang from the ceiling.You are going to have to find a way to support the fixture. If you can not get support from behind the ceiling then the support is going to have to be on the exposed surface side that you can see. You will probably have to span two ceiling joists and hang the fixture some where in between them to suit your purposes.
A metal detector will not find vegetable matter.
It might, depending on how much metal is contained in the ceiling structure itself, how close the transformer is to the surface of the ceiling, and the quality of the metal detector. The code doesn't permit an installation where the transformer is not accessible. If you are sure it is there and not in some other location, then install an access panel when you find it. Other methods would include putting a tone on the input or output side and try and trace with the tone receiver. You may also be able to see into the ceiling by removing a vent or recessed light if they are in the area. Finally you can cut a neat hole in ceiling and either use a mirror or a small video camera with a fiber optic probe.

Because the 'head' of the detector is usually plastic - not metal. The detector coil inside has a relatively short range - and is 'desensitised' to any metal components in the device itself.
