Freeze-drying is a process where a food is brought to an extremely cold temperature and then the water is removed through the process of sublimation (solid to gas). Bacteria and molds/yeasts require nutrients, water and oxygen to grow. Once the moisture is removed from the product, bacteria and molds/yeast are unable to grow in the food. Additionally, enzymatic and chemical reactions generally require water, so these reactions are inhibited as well.
