If they've all been removed because you completely removed minecraft from your computer and deleted the minecraft folder, then there's no way to get them back unless you have a backup of the minecraft folder saved somewhere else. If you have a backup just copy the texturepacks folder across.

Sorry though, there's no way I know of to get your servers back.

You will need to place the adventure map in the saves file. The easiest way to get to the saves file is to open up minecraft and go to the texture packs. Then click view texture pack folder. When you are in the texture packs file, just go back a couple of files in your .minecraft and there will be a folder called saves. BOOM you're done! :)
