The way I did it was to send an electronic invite with a note to guests to bring a bottle of their favorite wine, and their favorite cheese. That way you make sure everyone has at least a glass of wine they like. If you'd rather your guests not contribute, get a good variety of wines from a local liquor store. Any staff will be ready to help knowing you're buying a case or more. For cheese, my all time fav is Balderson (old Cheddar). The older the cheese the better. Cheeses like brie, mozzarella, Swiss and havarti are usually too plain to offer with wine. But hey, it's just my opinion. Everyone's taste buds are different.
