Since the Plumbing is going to be behind the vanity, cut out a section of the drywall and cut notches in the edge of the studs deep enough for the drain and supply lines and connect to the existing pipes. Install new sheetrock making sure you don't screw or nail in the spots where the pipes are.
You can run them inside the vanity also, there is always room at the back of the vanity and no one will notice.
