Chances are that you have a lot of mold in your environment that's inoculating your sour cream. Here are some suggestions:

# Do not let the sour cream warm up on the way home from the store. Consider taking a cooler and ice/ice packs to the grocery.

# Make sure that your kitchen (including utensils, surfaces and the refrigerator) is clean and eliminate possible sources of mold.

# When you open the container, take out only what you need with clean utensils, seal the container and place in back in the refrigerator. Make sure you are putting in on a middle shelf. The door might be too warm, as well as the top shelf.

# Check the temperature in your refrigerator. Verify the hot and cold spots since certain spots may be too warm. Move the thermometer around so you can find the warmest and coldest spots. # If all of the above doesn't help, try switching brands.
