Each leaf represent a wrapper covering the cloves. When the leave start to die back (around 9 months after planting) cease all watering. When 50-70% of the leaves have died (about 5-6 leaves are still green) you can begin harvesting. Don't rip the stalk out of the ground but loosen the soil around the bulb. Allow the bulbs to cure (airflow is important) in the shade for at least two weeks.
