Don't over mix it, and don't over bake it. Remember, cakes continue to bake for a little while even after you remove it from the oven. If you are still looking for the rum/brandy flavor, try visiting a cake supply store in your area. They have flavor syrups and concentrated flavors in a wide variety. Simply removing the liquor from your recipe won't dry it out, infact rum/brandy won't contribute to moisture in your cake.
