How do you make a Greek wedding cake?

In Rhodes, Greece, families, relatives or friends prepare all sorts of cakes with icing sugar as the predominant ingredient. Like in Cyprus and elsewhere in the East, rose water is used to flavour flourless almond cakes.

On every island of the Dodecanese, wedding cakes have variations . Honey is used instead of sugar , but rose water is a must.

Personally, I had made all the cakes and other wedding sweets for my two daughters' weddings.

I made 1,500 bombonieres (flavours) and 1000 pieces of almond sweets. They are made with ground almond, honey, almond essence, white bread or biscuits, rose water. Honey can be replaced with syrup made with water and sugar. All the ingredients are kneaded well and made into pear shapes. On the top you put a clover, for its lovely eastern flavour. Then they are rolled into icing sugar and placed in individual fairy cake cases (white). They are wrapped into a flower shaped cellophane and tied with a white ribbon.

This particular sweet is offered in many occasions with different colourings and flavours.
