Candied Sweet Potatoes with Pecans
Ingredients:
5 pounds sweet potatoes
1 cup water
2 eggs
1 teaspoon vanilla
½ cup butter, melted
1 cup brown sugar
Salt to taste
½ cup heavy cream (milk will work)
Topping Ingredients:
½ cup brown sugar
â…“ cup flour
â…“ cup butter, melted
1 cup pecans, chopped
3-4 cups mini marshmallows (Large marshmallows work, too)
Instructions:
- Peel sweet potatoes and cut into 2 inch pieces.
- In a large saucepan, add sweet potatoes to water. Cover and boil until potatoes can be pierced easily with a fork.
- Drain the potatoes.
- Preheat oven to 375.
- Thoroughly MASH the cooked sweet potatoes.
- Add eggs, vanilla, ½ cup melted butter, brown sugar, salt, and cream or milk. Mix until smooth.
- Lightly grease a 9x13" baking dish.
- Spread the potato mixture in the bottom of the baking dish.
- Topping: In a separate bowl, combine brown sugar, flour, â…“ cup melted butter, and pecans. Stir to mix well.
- Sprinkle mixture over potatoes.
- Bake uncovered for 15-20 minutes until pecans are caramelized.
- Spread marshmallows evenly over the top of the pecan mixture.
- Bake 5 minutes or until marshmallows are puffy and lightly browned.
