Preheat the oven to 375. Mix the butter, eggs, and brown sugar. Then add the corn syrup, pecans, vanilla, and salt. Pour the mixture in a pie crust and bake for 40 to 50 minutes. After the pie starts to thicken a little, you can pull the pie out of the oven and place pecans on the top before continuing to cook.

Ingredients
  • 1-2 cup toasted unsalted pecan halves
filling
  • 3/4 cup water
  • 3/4 cup white beet sugar or light unbleached cane sugar, see note
  • 1/2 cup brown sugar (packed) or sucanat
  • 3/4 cup water
  • 1 pinch salt
  • 1/4 cup cornstarch or wheat starch
  • 4 1/2 tablespoons cold water or rum or Bourbon
  • 2 tablespoons vegan margarine
  • 1 teaspoon pure vanilla extract
Directions
  1. NOTE: Use the white beet sugar/cane sugar AND the brown sugar/sucanat. it is NOT an OR. Use both white sugar and brown sugar.
  2. If you wish to try the maple syrup version of this I suggest googling Bryanna Grogan and Pecan Pie. Do not sub arrowroot or kuzu.
  3. Mix the cornstarch with the 4 1/2 T water.
  4. Preheat the oven to 400°F Bake your crust for 3 minutes. Remove to rack.
  5. Combine water and sugars. Boil for 5 minutes. Add salt and dissolved cornstarch and whisk rapidly.
  6. Stir and cook over high heat until just thickened and clear. Remove from heat and add margarine and vanilla. Stir until melted. It will be liquidish.
  7. Pour into shell. Place pecan halves on top and press down a little into the mix. Place in middle of oven at 350°F Bake 30 minutes. It will be jiggly. It should set as it cools. Cool for at least 1 1/2 hours on rack then refrigerate until completely cooled and set.

¾ cup unsalted butter

¼ cup light butter

1 cup Splenda® No Calorie Sweetener, Granulated

1 tablespoon

vanilla¼ cup egg substitute

¼ cup water

¾ teaspoon vinegar (white or cider)

1 ½ cups all-purpose flour or wheat flour

1 ½ cups cake flour

¼ teaspoon salt1 teaspoon baking powder

Cooking Directions

1. Preheat oven to 350 degrees F. Lightly oil a cookie sheet and set aside.

2. Blend together butters, SPLENDA® Granulated Sweetener and vanilla in a medium mixing bowl with an electric mixer, or by hand. Blend until butter is softened. Add egg substitute, water and vinegar. Mix briefly. Add flours, salt and baking powder. Mix on low speed, until dough is formed. Do not overmix.

3. Remove dough from bowl and place on a floured work surface. Divide dough in half. Pat each half into a circle and cover with plastic wrap. Refrigerate approx. 1 hour, allowing dough to chill.

4. Remove dough from refrigerator and roll out on a floured work surface to desired thickness, approx. 1/4 inch. Cut with cookie cutters. Place cookies on prepared sheet.

Bake in a preheated 350 degrees F oven 10-12 minutes or until lightly browned on the back. Cool on a wire rack.

Some fat-free pie crusts are crumb crusts, using fat-free granola, fat-free cookie crumbs or fat-free graham cracker crumbs held together with apple juice, honey and egg white.

Others attempt something resembling pastry with cooked apples replacing the shortening in a regular crust, with flour, baking powder and some type of liquid.

SUGAR FREE PECAN PIE

3 eggs

5 teaspoons sugar substitute for baking

1 cup sugar free breakfast syrup

1/3 cup butter, melted

1 cup pecan halves

Pie dough for a single 9-inch crust Preheat oven to 350 degrees F. Mix the eggs with the sugar substitute. Stir in the breakfast syrup and the melted butter. Stir in the pecan halves. Line a 9-inch pie pan with the pie dough. Pour in the pecan pie filling mixture. Bake for 25 minutes with edges covered with foil. Remove foil from the edges and bake for another 25 minutes or until you can insert a knife and have it come out clean. Cool and cut into 8 pieces to serve.
