Hello, i do have a penne pasta recipe but I'm afraid it does not have pesto in it. Anyway i will give you the recipe. My friends love it and so does the rest of the family. This recipe serves 4 people. oz=ounces lb=pound(s) floz= fluid ounces

Ingredients:

400g(14oz) dried penne or 500g (1lb) fresh penne

For sauce: 2 tablespoons of olive oil

1 onion

1 carrot

1 stick of celery

2 rashers of streaky bacon - optional

1 clove of garlic

225g (8oz) lean minced beef or lamb

225g (8oz) can chopped tomatoes

2 tablespoons of tomato puree

1 beef or vegetable stock cube

1 teaspoon of dried basil

freshly grounded black pepper

To serve: (this is optional) grated Parmesan Cheese

  1. Peel of scrape the carrot then grate it. Crush the garlic and cop the bacon, onion and celery finely. Heat the oil in a saucepan over a medium heat.
  2. Add the bacon to the pan and cook for three or four minutes. Stir occasionally. Add all the vegetables and cook them until they are soft.
  3. Add the minced beef or lamb to the pan. break up the meat with a wooden spoon and cook it for six to eight minutes, or until meat is brown all over.
  4. Boil a kettle of water. Crumble the stock cube into a measuring jug and pour in 125ml (4 floz) of water. Stir it well then add it to the meat.
  5. Pour in the tomatoes. Stir in the puree and basil. Put the lid on the let the sauce bubble gently for 30-40minutes. Remove the lid halfway through.
  6. As the sauce is cooking , stir is occasionally to stop it from sticking. It will become thicker and the amount of liquid will reduce.
  7. About 15 minutes before the sauce is ready, boil a pan of water. Add the pasta and cook for the time it says on its packet. Drain it and serve immediately.
  8. Now its time to eat. Serve up and if you want to add grated Parmesan Cheese then that's up to you.
