Remenber all the times you've seen a recipe that says ... and season to taste.
That's the best way out of this one; take a small sample of your too-sweet chili, add a very small amount of ingredient x. Taste it. If it seems good, add more to the main body. Not too much, you can always add more if needed.
If x didn't work, take another small sample and add ingredient y. Keep on trying till something works. Things you can try include : -
lemon juice
lime juice
minced raw onion
minced raw garlic
vinegar
anything else in your cupboard with a sharp, sour or acid taste.
Throw in a couple of medium whole, peeled potatoes and simmer for approx. 1/2 hour to an hour. The longer you cook chili the better. Once you have done this take the taste test to see if you like the taste and you may need a little more salt. Marcy
It is very difficult to tone down the heat of hot peppers once added to the dish. In the case of salsa, one could add additional tomatoes, onions and/or tomatillos, effectively reducing the heat of the peppers while doubling the amount of the salsa.
* Add more tomatos and cilantro * Chopped cucumber can add a nice fresh taste and tone things down as well.
To make it less spicy, try adding a can of diced tomatoes to the salsa.
Include a hotter chilli sause or add more peppers.
Add lemon juice.
Hot sauce, crushed red pepper flakes
Add more broth.

It depends on what type of dish you are making savory vs sweet? Savory I would dilute with some liquid of cooking cream, stock or wine. If a sweeter taste is what you are after then some dark brown sugar or white sugar with a little molasses added could work.
the best way i have found to tone down the taste of sage in homemade vegetable soup is to add a little ketchup and sugar.. depending on what your making usually anything sweet will help tone it down. hope this helps.

One way to tone down a spicy dish (soup, chili, etc.) is to add quartered potatoes to it and boil for a few minutes, then remove the potatoes before serving. The potatoes will remove some of the spice and also will work for dishes that are too salty.
