I've heard that yes, it's healthy to eat one every day. I'm doing just that, but... it comes out down south... I don't know. The story was that the olive kernel is the only kernel that the stomach can digest. Since it comes out... what should I believe now?! Added: I think the answer above is mixing up the kernel with the olive pit. The actual kernel is the tiny soft nut inside the hard shell of the olive pit . This will be digested and not pass through you if you crack the pit first and swallow the kernel instead of the pit. Incidentally, from what I have garnered, most olive oil, including extra virgin olive oil is made from pulverised olives, which includes ground up flesh and pit. Therefore the olive oil will contain substances from the pit and kernel of the olive as well as the flesh. No heat should be applied if it is extra virgin olive oil, but these mechanical means are allowed. This may explain the health benefits of olive oil. It is a good bet that the kernels will contain an array of anti-oxidants and phytochemicals(as grape seeds do) but I cannot find any specific information on this.

An olive press is not like a traditional fruit press (apples, pears etc) it will actually grind the olive stone and all to produce the oil. Olive oil is the end result but many people do not realise this also includes the oil obtained from the pit.

Olive pits can be turned into beads by drying them out thoroughly, drilling them and, ideally, oiling the with teak oil or similar. Like most pips or stones that are indigestible they will pass straight through the digestive tract if swallowed.
