When you pit an olive you must use a knive and carve a small hole in the top,take the seed out and save it to be grown or throw it away. Make sure you wash your hands.

This will be digested and not pass through you if you crack the pit first and swallow the kernel instead of the pit. Incidentally, from what I have garnered, most olive oil, including extra virgin olive oil is made from pulverised olives, which includes ground up flesh and pit. Therefore the olive oil will contain substances from the pit and kernel of the olive as well as the flesh. No heat should be applied if it is extra virgin olive oil, but these mechanical means are allowed. This may explain the health benefits of olive oil. It is a good bet that the kernels will contain an array of anti-oxidants and phytochemicals(as grape seeds do) but I cannot find any specific information on this.
