Therefore the olive oil will contain substances from the pit and kernel of the olive as well as the flesh. No heat should be applied if it is extra virgin olive oil, but these mechanical means are allowed. This may explain the health benefits of olive oil. It is a good bet that the kernels will contain an array of anti-oxidants and phytochemicals(as grape seeds do) but I cannot find any specific information on this.
