I had been wanting to try them whole, on the barbecue, with a lime and chilli dressing, mackerel for breakfast simply fried in a little butter. Firstly, the fish are coated in flour which has been well seasoned with plenty of salt and pepper. The butter is melted in the pan until foaming and the mackerel fried lightly on each side until just cooked and golden. Served with a wedge of lemon. Nige

Fish is actually a great thing to cook in a pinch, as it doesn't take more than ten minutes to cook up. Sole meuniere is a fancy French fish dish that is sold in many restaurant. Basically, it is sole in a butter and lemon sauce. This is a great base for a sauce and many other flavors can be added to the mix—like capers, white wine, fresh herbs. Cooking can be casual, use what you have!

Ingredients:

1/2 cup all-purpose flour

Kosher salt and black pepper

2 fresh sole filets

3 tablespoons unsalted butter

The zest of two lemons (about 2 tablespoons)

The juice of 3-4 freshly squeezed lemons

1 tsp dried parsley

¼ cup white wine (optional)

1 tablespoon capers (optional)

Directions:

1. Combine the flour, 2 teaspoons salt, and 1 teaspoon pepper in a large shallow plate. Pat the sole filets dry with paper towels and sprinkle one side with salt.

2. Heat 2 tablespoons of butter in a sauté pan over medium heat until it starts to brown. Dredge 2 sole filets in the seasoned flour on both sides and place them in the hot butter.

3. Lower the heat to medium-low and cook for 2 minutes. Turn carefully with a metal spatula and cook for 2 minutes on the other side.

4. Remove filets and add lemon zest, lemon juice, white wine and capers to the pan. Let sauce simmer for 5 minutes.

5. Return filets to the pan, heating through another 2 minutes. Sprinkle with the parsley and serve hot.
