Enter preferences. Select messages tab. At the bottom, there exists an option, "Save chat transcripts" or some similar item. Near that checkbox is a button, "Go to this folder." Click that. If ichat has been set up to save transcripts, then they will be in that folder. Double click whichever one you would like to read. If not, click the checkbox described earlier. you can only read transcripts of chats that took place when this setting is active.

iChat is serviced by AOL Aim services, so it would be the same as everyone else's AIM programs, but I don't know if it supports text messages.

Yes, you may use your AOL IM screen name with iChat. Simply select AIM as your account type when creating a new profile in iChat.
