You can buy purpose made tools for this job that you use with your drill/driver to extract them. Try hammering the correct screw driver into the back of the screw to try and get some purchase on it and then keep lots of pressure on whilst turning. Make sure you turn anti- clockwise.
Go o screwfix.com and quote 72768-88 and you'll see a powergrip set made by Irwin at a cost of £30.00 or $60.00. That's what will do the job if brute force doesn't work.
To replace a cabinet hinge, you must first remove the screws that attach to the door with either a screwdriver or a drill with screw bit. Next you want to remove the cabinet door. Once you have removed the door, remove the hinge from the cabinet. You can then attach a new hinge. A nice tip is to have a partner hold the door while you screw the hinge back in place.
The calipers are threaded and screw out.

when lead of the screw is equal to the pitch it is called single threaded screw
Nail or bolt, which is threaded like the screw.
Divide the threaded length by the lead length. For single threaded screws the lead is the same as the pitch.

You can use the type of hinge that is a screw threaded bolt that the gate sits on. You would just have to drill the pilot holes in the right place and angle. If using a strap hinge, you can either shim behind one or chisel out a groove for the hinge to sit in. Without seeing it, it's hard to give specifics on how to do it. Set the gate in the opening and see what it takes to make the hinges you want to use work.
Bracket would work. Buckle would be more unusual.
