I know you can't remove an oil pan from a 5.0 l F-150 no matter how high you get the engine in the air. I can't speak to the 6 banger, but if your trying to replace your oil pump, the best you can do is get the engine up ( yes undo mounts) and the pan will turn on its side enough for you to get your paws in there and change it,
You have to take the motor out!

On a 1973 Ford F-250 : The point gap for the V8 engines is ( .017 inch ) and for straight 6 cylinder engines ( .027 inch )
drain remove fan and shroud undo top and bottom hoses and remove about 4 bolts.
Remove the knobs, remove the dash panel, and replace the switch.
Just pull it out. There should be nothing holding it in the differentail after you remove the locking hub and the hub.
