The iPod Touch does not have a 'hold button'. To restart the iPod Touch from a frozen screen position, hold down the power button, and then slide the off switch to the right, and it will shut off (and will take longer than usual). Then, just turn it back on by holding the power button until the Apple logo appears.
Use the small power button on the top right of the iPod. Hold until the screen shows a bar that says 'slide to power off' and slide the arrow. pushing the same button will turn it back on again.

Did your home button got broken? I would suggest jailbreaking your iPod (assuming its still kind of working if you fiddle with it) and than install "activator" then you will be able to control your iPod without touching the Home button or Sleep button.
Go to settings under your I device. Press the check for update button and click continue. IOS5 will install on your device.
you can't restore ipods without iTunes. but if your meaning to reset the ipod try pressing the middle button and the menu button the same time.
To restart an e-book on a Kindle, you can navigate to the Home screen and then reopen the book. If you want to start from the beginning, you can go to the beginning of the book by swiping or using the table of contents. Alternatively, you can also press the power button to put the Kindle to sleep and then wake it up to return to the last page you were reading.
