For most cooking of nuts, one simply needs a heavy frying pan. Most nuts have oils built into them so all it has to have is heating. If you use the heavy skillet, the heat will "fry" the nuts nicely with no added oils. Salt to taste and you have a healthy snack without added oils or calories.

You roast them. Spread the pistachios in a single layer on a cookie sheet. Put them in a hot (400) oven and wait about 5-10 minutes. The pistachios will pop open from the steam inside the shells. They're done at that point. Salt to taste.
