the question is a bit unclear the way i see it ,it can mean why we call the dish royal tandoori murg? or could simply be asking what it is called in local parlance ?

i will try to answer both the word royal in the English names ofmost dishes can be replaced with the local words like shahi which comes from the word SHAH meaning the king or with the word RAJ as in "rajbhog" meaning the food of the royality or even the more commonly known mughlai which means "of the mughals" which refers to the Mughal dynasty which ruled large parts of northen India for more than a century.

translation--Shahi tandoori murg--shahi i have already explained above, the word was attached to a dish if it was first made(invented) by a royal cook for the royal family or even if a cook altered an already existing recipe and replaced the cheaper ingredients with costlier ones or added costly ingredients like dry fruits and saffron ect. to it.

tandoori means from the tandoor the tandoor is a kind of an oven, a cylindrycal furnace rather, made of clay and earth in which they cook the 'murg' murg simply is the term for cock, hen ,chicken.
