In modern terms you could get away with "Latina est lingua pulchra", as in our way of speaking many times an adjective is used for a noun, and this sentence continues to say you are speaking about a language and not, say, a Latina or Hispanic girl.

You can also use other words to say that someone is beautiful. One of the is Clara(which has many definitions, one of them is beautiful or good looking) or even Bella meaning beautiful(not to be confused with bellum which means war).
