I use freshly ground black pepper, sea salt, garlic powder and onion powder. Mix these spices together in any proportion that suits your tastes and rub it onto the entire roast prior to cooking.

Make sure the roast is towel dry, then sprinkle sea salt and cracked black pepper liberally all over, rubbing it in with your hands.

Slow cooking trumps seasoning. There is more than enough flavour in the meat to provide the desired result without any seasoning if you avoid high heat and fast cooking... Place the roast in a pan, add a little olive oil, and under medium heat brown on all sides. I add garlic to the pan at this point and let it brown with the meat. Deglaze the pan with a little red wine and pour everything over the roast before placing in the oven. Roast slowly for min of 2hrs+ at 180.
