The trouble is that so long as they do not stop her check for work already performed, they can at least pay by check instead of direct deposit. There are no laws that compel direct deposit. However, you should be able to sign any work related item while at work and being paid. If it is enough of an emergency that you sign now, then they shouldn't mind paying you. Now, the trouble with all of that is that if you want to keep your job, beating your boss over his head with the law will not work. It is not supposed to be said aloud, but it is well known that people get fired for reasons other than the real ones. One must be careful then in exercising their "rights". If the person does not go in off the clock and sign the paper, they will not be fired for that. No, they'll be fired for some trumped up or made up offense, several weeks or months later.

It depends on who is doing the depositing/withdrawing. If the person/company owed money set up the direct payment from your payroll check, it should automatically stop when the debt has been paid. However, if you set up the direct deposit, it will continue to go through to them until you stop it by re-doing your direct deposit through your employer. Usually it's a form you fill out that lists the accounts your check goes into and the amounts - you would just submit a new one and it could take up to two (usually) pay periods to go into effect. And then the company you owed money to should cut you a check for the overage when you contact them.
A stop sign is a red sign that says "STOP" and it is better than a stop light because it's cheeper and free.
