Happy Hanukkah is writing as "חג חנוכה שמח" (Hag Hanukaah Same-ah) in Hebrew.

But actually, in Hebrew, you usually do not mention the name of the holiday in greetings. So you would just say Happy Holiday, which is hahg same'akh (חג שמח)

Chanukah is spelled:

Chet, Nun, Vav, Chaf, Hey - (חנוכה)

When written with vowels, you don't include the vav: חֲנֻכָּה
