Those date imprints can be a nuisance, can't they? The first time I used my digital camera, I had the feature turned on for a whole vacation. After having to retouch out a lot of unwanted dates (you'll notice that Old Masters' paintings have no date imprints on them) I turned the feature off and left it off.
That said, unless you're skilled with an airbrush, you can try obliterating the date on a print with something opaque. If the imprint is in a dark area, you might try India ink (a deep black opaque ink) in a small brush or fine pen under magnification to carefully paint out each character of the date. (A large magnifier on a stand, perhaps with a ring light, is very helpful for keeping both hands free.)
Other than opaquing on a physical print, even though I know you'd prefer not to, the only way I know that you can permanently remove that unwanted date imprint from an original image file is to either crop it out, possibly losing important image data and/or changing the aspect ratio of the picture, neither of which is usually desirable, or by using some version of a photo editing application such as, but not limited to, Adobe Photoshop. I'm not familiar with all of them, but there are programs for Windows that are downloadable online. Photoshop, which I use, has a terrific tool called the "healing brush" which I have personally used to remove datestamps from pictures. If you have a version of Photoshop which lacks the healing brush tool, you can try using the clone stamp. These tools take some practice and usually perform best if you work slowly, and with the image magnified. If you're not satisfied you can always revert, and it's always well to "save as" another file and keep your original untouched in case you change your mind.
Just take a bunch of pictures and photoshop or paint or find a website and write the names on the pictures xD
