To remove the stem off collard greens, you rinse or soak the greens in water. The you take one leave and a time and can do either one of two things.
!) You can fold the leaf in half and with a knife cut down the fold to remove the stem.
2) You can lay the leaf flat and cut down one side of the stem to remove the leaf. Then strip the stem off the left over leaf.

I am assuming you are worried that collard greens can go bad the same way meat does if not kept cold. They do not have to be kept cold. Coldness will keep them fresher but it takes days for them to start rotting.

Collard Greens INGREDIENTS * 6 ounces salt pork * 8 cups water * salt to taste * 2 bunches collard greens * 1/2 cup cider vinegar * 4 teaspoons white sugarDIRECTIONS # Place the pork, water and salt in a medium size pot. Bring to a boil over medium high heat. Skim off any fat that rises to the top. Reduce temperature to low and let simmer for 30 minutes. # Meanwhile, prepare greens. Discard damaged or yellow parts of leaves. Cut away the tough ends from each leaf. Place greens in a colander, and wash thoroughly until rinse water is clear of dirt. Fold each leaf in half at its center vein, fold over once or twice more, then cut in half. # Stir prepared greens into the simmering liquid. Let simmer all together for approximately 1 hour over low heat. Ladle into shallow bowls, and add sugar and cider vinegar to each bowl. Serve.
You may want to check the collard greens clogged up in the intestines. Sometimes Aunt Jamamma cooks up some ghetto greens and it will cause a buzz at the commode. If the handle make a complete or almost a complete turn, it has a washer that makes the seal to stop the water. This washer will sometimes come apart or come off the stem and get stuck in the opening for the water. Take the stem out and replace it. Shut the water off, there is probably a shut off under the sink, take the handle off. It is most likely held on with a screw in the top. The stem is held in with a nut. Take the nut off and the handle unscrews out of the faucdt. The washer is on the bottom of the stem and held on witha small brass screw.

With the faucet shut off, take the handle off and under it is a nut around the stem. There is either an O ring under the nut, a fiber washer or stem packing depending on what type of faucet it is. Replace which ever it has and that should fix it. If your faucet is a screw type, the handle turns several time when opening it, you can probably take the nut off, wrap two or three wraps of stem packing around the stem, clockwise looking down on it and replace the nut and tighten. This will compress the packing around the stem without replacing the cone washer in the nut or all of the old packing.
You should turn off the water at the main valve in your home, and take a Phillips head screwdriver, and remove the stem of the faucet. The leak is like from a gasket at the end of the stem. Take the whole stem to the hardware store, and get a new one. Put it all back together.
Your beets may keep growing after the greens are cut off. The tops will usually grow back and the roots continue to grow as long as weather and climate conditions are suitable.
