While restoring, you should leave it alone and not do anything to effect full restore.
Plug it in and sync it and it should ask you whether you would like to transfer purchases.

You Sync it. Plug it in to the computer, set it up, and press Sync. Leave it for an hour and come back and it is all on your pc
Try going to My documents and click My Music. if you have a folder labeled 'windows music' or whatever it is drag it into your Zune folder. that should do it but im not completely sure. that's just what i do to transfer my limewire music

Yes you can transfer music from your ipod to your itunes library, go to ipodrip.com. They let you transfer a limited amount of songs for free and then you must pay to download them all. I used it last week and it transferred all of my songs into my itunes library.
On a Mac click on the music file in a folder and drag it into the iTunes Window and the music will be added to your iTunes library. If iTunes is not running you can drag the music file into the iTunes icon in the dock and it will be added to the library.

i'm assuming you want to transfer music from your iPod to your laptop. plug in your iPod and open iTunes and go to File>Transfer Purchases
