Yes you can transfer music from your ipod to your itunes library, go to ipodrip.com. They let you transfer a limited amount of songs for free and then you must pay to download them all. I used it last week and it transferred all of my songs into my itunes library.

On a Mac click on the music file in a folder and drag it into the iTunes Window and the music will be added to your iTunes library. If iTunes is not running you can drag the music file into the iTunes icon in the dock and it will be added to the library.

when you plug it into the computer, itunes should come up. if you don't have itunes you should download it. you can put you cds into the computer and it will rip it to your itunes library. then sync your ipod touch.
Updates to the iTunes software only affect the iTunes application and does not touch your music library.
If you search google, and download Sharepod or iDump you can transfer music from your iPod to your computer then onto iTunes. These are both free software.
