I also have the 4.3 ltr V6 Vortec Engine (both the throttle body engine & one with the FI spyder setup)...and aside from the obvious (replacing cap, rotor, plugs, wires, etc.), I found out the only (or best) way to check out the engine's running quality is to find someone who has one of the older computers (that reads the codes to determine if there are any issues with things like the knock sensor, O2, etc)...The best procedure is to start with the Hayne's manual for 'Your Car', then go thru the recommended procedures. leaving any questionable issues to whatever codes come back to guide you...As an example, the knock sensor may only be half of the problem in an engine's spark knock and it may need a timing adjustment as well (or only)...and really, the feedback 'from the codes' is the best (easiest) method of finding out what is functioning properly and what isn't... Conveniently, all the codes, as well as all the diagrams, obscure part locations, etc. are mapped out in the Hayne's books 'specific to your car and that engine'...Good Luck!... Oh, lastly, regardless of any books and knowledge you have, Finding a 'really good mechanic' (although getting more difficult every year) is without parallel in keeping your engine in top shape and running it's best...
it is not adjustable, it is controlled by the computer.
