You can use an immersion probe to check the internal temperature of a pot of soup. You can also use a thermocouple with a surface probe to check the internal soup temperature.
You measure food temperature when the food looks cooked. if it does not reach the temperature that it should then you will need to cook it for longer even though it is cooked on the outside. you can get sick from eating uner cooked food.

Food safety requires that food be cooked to 160 degrees F and stored at 40 or below. The internal temp is used. That is why they stick a probe in it.
You can use a regular thermometer probe to take a underarm (axillary) temperature.
Food temperature is generally checked by inserting the probe into the thickest part of the food, using a sanitized, calibrated, instant-read thermometer.
