It sounds like for most of their cribs you remove the side that moves. You probably want to consult the original directions on how you put that side in it to figure out how to get it back out - as they say, you have to loose the front two gold bolts, too.
You don't have to put anything in instead, we just took our crib rail off and left the side fully open, but they sell a side rail to make it look a little nicer and to help encourage your kid not to roll out of the bed. :)
