How do you tell if your head is cracked or your head gasket?

The only way to tell for sure is to remove the head and look. You are going to have to remove the head in either case. Remove the head and take it to a machine shop and have it inspected for cracks and to see if it is warped.

Does a motor have to be overheated in order to have a warpped head?

That is the most typical thing to cause a warped head. A warped head is a severe diagnoses and not the first thing that would come to mind for a problem. Don't know what the issue is but if you have a problem that has lead to you think you have a warped head and you haven't had a extreme over heat of the motor I will bet you don't have warped head.

Would it be better to replace a head gasket or put in a recon engine on a y reg fiesta zetec?

Bit of a tricky one ... It all depends on the condition of the cylinder head. If the cylinder head is warped then replacing the head gasket won't solve your problem. A warped cylinder head can be skimmed (if not too badly warped). If the cylinder head is badly warped then it would be much easier to replace the head than fit another engine.

Do you shave the head when changing a head gasket?

It actually is called milling the head its to ensure that the head is flat and true so that you get a good seal when mating it back to the block. You do not have the mill the head unless it is warped. Have it checked at a machine shop and they will tell you if it needs milling.
