Fill a small pan with water (about two thirds full) and put on heat to bring up to a rolling boil, take your fresh egg and make a small pin hole in the rounded end, this end has a small air sack, the hole will help prevent the egg cracking open in the boiling water. Place the egg on a large spoon then lower into the boiling water, cook for 6 to 7 minutes, remove from the water and refresh under cold running water to stop the black ring forming around the yolk. Peel and eat.
