Defense rating reduces your chance to be critically hit by a mob, and also reduces their chance to hit you. It also adds a small amount of block, doge and parry. The higher level you are, the more rating points you need to get the same percentage of stats.
Dodge gives you a certain chance to completely avoid a melee or ranged attack, while parry allows you to fully ignore a melee attack and also makes your next auto-attack hit quicker. Again, a certain number of rating points convert in a certain percentage chance to dodge or parry, and the higher level you are, the more rating you need for a certain percentage.
Block is divided into Block Rating, which gives you a certain chance to block an attack with your shield, and Block Value, which determines how much damage is reduced per blocked attack. A shield that has 11 block value would reduce damage taken from an attack if it is blocked by 11.
The chance to be missed + dodge chance + parry chance is called Total Avoidance, meaning taking no damage.
