Different types of alcohol can elect different responses from the person drinking. Some people become more forceful and angry when drinking wine, while beer makes them simply happy and lethargic. Some people experience the opposite.
It mostly depends on the original personality of the person. Not only who they appear to be, but who their inner personality is. Normally, the "true" personality of individuals are brought out via alcohol.
As a person drinks, alcohol affects everyone more or less the same; they lose coordination, speech begins to slur, they feel more relaxed, liberated and become less self-conscious, letting their true selves become more evident, thus the change in personality.
