If you took a telephone apart you would find in the mouth piece a Piezoelectric Transducer. Inside of that you would find a piezoelectric crystal. This crystal, when put under pressure or subjected to vibrations will produce a very tiny electric current and also change size (in the nanometer range which is 1 billionth of a meter).
This very minute change of dimensions ,in relation to the vibrations of our voices, allows us to build a sensor to detect these changes and turn it into an electrical 1 and 0 binary code pulse.
These pulses can then be sent through the wire (or wireless now:) and into the base unit. This then goes through your telecommunication provider's infrastructure, be it ground or space based.
Now those electric pulses can be directed to the number you have dialed and the person who speaks back to you starts the same process again.
