The authors of the Book of Genesis had no concept of evolution, so when they wrote of creation as they thought it might have happened, they described God as creating animals just as we know them now, and totally excluding evolutionary change.
The first creation story (Genesis 1:1-2:4a) says that God created grasses, plants and trees before there was a sun or moon, unaware of the importance of the sun and moon for all life on earth. He created birds before he created land animals, although we now know that birds are evolved from dinosaurs.
The second creation story (Genesis 2:4b-20) says that God did not create all the plants, because there were plants already in the earth, waiting for God to make it rain. It says that God created a man before he created any of the animals. He then, possibly long after the creation of Adam, created a woman out of a rib from Adam.
The Book of Genesis not only disagrees with the Theory of Evolution, it disagrees with itself, between the first and second creation stories. Both stories assume that creatures have never changed or evolved. The first assumes that plants can live in the absence of the sun, while the second assumes that plants will simply grow, uncreated, out of the ground if it rains. The second story makes the creation of Adam the first act of creation, so that there was already a man before any other species, in disagreement with the archaeological record.

The consistent Genesis account of Creation plainly tells us who is doing the creating or renewal of the Earth which becomes the start of the 'reign of man.' Unlike Evolution which is based upon ideas of mankind and probability/chance occurrences, The Bible is based upon the Creator's account of HIs acts which He inspired men to write down to tell future generations.
About 4,000 years after this renewal (see Psalm 104:30), God manifested Himself in human form and walked the land. He, as Jesus Christ, confirmed this creation event recorded in Scripture, as He was there doing the creating (see John 1:1-4). So creation has an eyewitness - God Himself - and evolution only has the mind and imagination of mankind.

Many people think that evolution is very compatible to the Christain faith, but if you think about it, it isn't. The Bible never talks about evolution. It clearly states that God created the heavens and the earth, and the book of Genesis tells us about everything he created.
