They don't exactly "change gender." While the default development pattern is female, they start out with primitive structures for both. The structure are called Müllerian ducts (or paramesonephric ducts) and Wolffian ducts (or mesonephric ducts). If the male genes of the Y chromosome are present, adrenal androgens spike, causing the Wolffian ducts continue to develop into male parts and produce chemicals to inhibit the Müllerian ducts from developing. Otherwise, the Müllerian ducts develop into female parts and produce chemicals to inhibit Wollfian duct development.
