The pancreas consists of both exocrene and endocrene tissue. Exocrene tissue secretes digestive enzymes into the duodenum to break down acids, carbohydrates, fats and proteins and bicarbonate to neutralaize stomach acid. Endocrene tissue secretes hormones glucagon and insulin, controlled by a third hormone (somatostatin) directly into the bloodstream to regulate blood sugar.
The pancreas is a digestive organ, secreting pancreatic juice that contains digestive enzymes that help digest and absorb the nutrients in the small intestine. These enzymes help to further break down the carbohydrates, proteins, and lipids in the chyme.
