Vehicle brakes work by clamping pads against a steel disk or drum under high pressure to stop the disk of drum from rotating. The pads need to be able to withstand high heat without softening. They used to achieve this by using asbestos minerals; these have been replaced in most places with less problematic mineral fibers, cellulose, glass and metallic fibers.

But some canti brakes use pads with threaded posts, and those should work, after a fashion, with v-brakes. Do note that canti brake pads are usually thicker and shorter than v-brake pads, which can influence the performance and the setup.
