The environment factors into the development of an organism in a few ways, but the main one is how it affects the organism's DNA. If an organism occupies a certain habitat, with a specific environment, throughout its life, and then continues to have offspring, they will adapt to their surroundings. Take, for example, a plant. It starts growing in the desert but there is no easy access to a steady water supply. This plant's DNA will form alleles (alternate forms of the same code of DNA) or different organs/traits to enable the plant to survive with what little water it has. The Cactus is the perfect subject for this example.

If the plant has offspring, these plants will inherit the genes of the parent plant and continue to form their own so as to adapt with the utmost efficiency. Basically, the environment is a HUGE factor when discussing Evolution.
